Our Philosophy
從小就愛上葡萄酒香味的我,其實酒量不佳,也從不喝烈酒,也不喜歡啤酒飲到滿肚脹脹的感覺. 踏入社會後,因工作需要,有很多機會嘗試到不同的葡萄酒,發覺原來不同的酒款可以在味道和香氣上有那麼大的差別, 名貴的不一定合自己口味,價錢低的也可能有極佳的口感,非常有趣!
我喜歡紅酒因為他酒精度不高理論上不會喝到醉醺醺, 喜歡他的顏色特別在燈光照射下各種迷人的 紫色紅色棕色 喜歡他全由葡萄釀製但竟可散發出不同水果香草甚至咖啡皮革乃至鹹肉的味道, 喜歡他在搖晃紅酒杯時散發出的天然帶有微微酒精的香氣,
自從學酒到一定的程度, 葡萄酒知識真是博大精深, 香氣口感色澤單寧結構酒體回味複雜性以至到產區品種種植氣候酒莊品牌樣樣講究,
但我只信好飲才是王道,作為一個紅酒享用者，最直接品評就是（好唔好飲）. 然而好唔好飲絕對會因個人口味不同而有極大的分歧, 所以我認為沒有任何一種紅酒會適合所有人的口味,也絕對不是名荘或者是價格昂貴就會必定受大眾喜愛.
數年前正當筆者的旅行社生意還忙過不停的時候, 機緣巧合去了一趟位於高加索地區的….格魯吉亞 , 對於香港人來說格魯吉亞是一個相對陌生的國度，雖然格魯吉亞的旅遊資源十分豐富，但熱愛旅遊的香港人到過此地的卻寥寥可數，踏入格魯吉亞的國土，除了當地人熱情好客，深厚歷史背景和未被開發的山川湖溥景色深深震撼著我，更令我動容的，就是格魯吉亞的葡萄酒文化.你竟然可以從當地的城市雕塑，藝術氛圍，人民生活甚至教育課程當中深深感受到葡萄酒在格魯吉亞根深蒂固的重要性，當地人民無不驕傲地向我介紹格魯吉亞葡萄酒的質量和特色之處，當然，我在格魯吉亞的早午晚三餐都有美酒陪伴着，旅程的任何時候都帶着一點微昏熏！因為格魯吉亞的葡萄酒實在太好飲了，其實的他的風格和傳統舊世界例如法國西班牙意大利的葡萄酒有頗大的差別，他就是簡單直接，帶有一點原始和鄉土氣息的葡萄酒，沒有太多的修飾但卻是八千年來葡萄酒的本質！對的，格魯吉亞就是全世界葡萄酒歷史最長遠最古老的地方，比起有二千年釀酒歷史的法國，格魯吉亞還要整整長了六千年呢！聯合國教科文組織已經把格魯吉亞的古老釀酒方法（Qvevri Wine 陶罐釀酒）納入了世界文化遺產UNESCO.，肯定了它的歷史和地位，而這種釀酒方法（陶罐釀酒）也一直沿用至今.，是格魯吉亞葡萄酒的一大特色也
正如先前所說,我不太愛高酒精度，因此格魯吉亞傳統的風格半甜較低酒精度帶着清新果香的葡萄酒就是我的最愛，當然格魯吉亞同樣有乾紅Dry不帶甜的紅酒，也釀製得非常出色，近年格魯吉亞在國際的葡萄酒大賽中，戰績彪炳，贏了不少傳統的法國名莊就可見一班
這樣的神仙美酒為何不引進來香港呢？我不敢說所有人都會喜歡格魯吉亞紅酒，但對香港飲家酒友來說，肯定是一個有水準有特色的新口味，新酒款！我決定要把格魯吉亞的美酒帶來香港，我希望讓更多香港朋友嘗試到這個（好飲）的紅酒，其實格魯吉亞的紅酒在歐美是很受歡迎的，在世界上是有地位的，只是未在香港普及，格魯吉亞葡萄酒一直以來都是俄羅斯和前蘇聯的國宴用酒，前蘇聯領導人斯大林也是用格魯吉亞紅酒來款待外國的元首和政治領袖.
總括而言，我真誠希望將格魯吉亞葡萄酒以最大眾化的價錢，最負責任的態度，介紹給所有的香港飲家和酒友，將格魯吉亞這個美麗的地方, 推薦給所有熱愛旅遊的香港人 .
